Sesame Balls

Pregnancy Craving Fulfilled

Ingredients: Flour Dough
1 bag glutinous rice flour
1 cup rice flour
1/2 cup mash potato flakes

1 can coconut milk (14 oz)
1/2 cup water
1 tsp salt
1 tsp baking powder
1 cup sugar
1 bag sesame seeds
oil

Filling: Mung Bean
1 cup mung bean
sugar - how much you add depends on how sweet you want the filling to be


Steps:

1. Boil the mung beans in water for about 10-15 minutes or until mushy/soft. I found out by accident that if you boil it soft enough you don't have to mash or blend it together; I actually prefer it this way because the filling will be softer then if you had done it the usual way. Once it's done boiling, pour the mung bean into a strainer to strain out the water. Once you're done straining the water put the mung bean into a bowl and add sugar according to how sweet you want it to be; set aside to cool.

2. Mix and blend the flour dough. Pour everything into a big bowl; glutinous rice flour, rice flour, potato flakes, coconut milk, water, salt, baking powder, and sugar. Blend with a blender at medium speed until all ingredients are mixed. Remove the blender and continue to knead the dough; I kneaded mine for about 5 mins. Then let it sit for about 15 mins.

3. After letting the dough sit for 15 mins the mung bean should be done cooling off. Break off part of the dough and start rolling it into a ball; how much dough you break off depends on how big you want your sesame balls to be.  Once you have a ball, pat it flat, scoop and put some mung bean filling in the center, roll up the edges of the dough to cover the filling and roll again to form a ball. Once you have a ball shape again roll it in the sesame seeds and set aside to be deep fry later.

4. After you're done rolling all your balls, pour oil into a frying pan. Use enough oil where your sesame balls will be completely submerge in the oil. Once the oil is hot turn the heat to medium and add the sesame balls. Fry the sesame balls for about 15 mins; constantly turning the sesame balls to make sure they are cook evenly.


(With this recipe and measurements I made about 20-25 medium size sesame balls)

Fried Rice with Eggs

Easy, Quick, and Yummy

Steps:

1. Make the rice in the rice cooker. I have a 5 cup Tiger Asian rice steamer; I usually make about 2 cups, adding water to about the 3rd line. My rice cooker takes about 15mins to cook the rice.

2. Once the once is cooked, scramble and fry the eggs then set the eggs to the side. How much eggs you make is up to you. (If you don't want eggs, skip this step)

3. Next, in a wok or large enough frying pan put in a little oil. Once the oil is hot pour in the frozen vegetables. You can use any kind of frozen veggies, I like the one with corn, carrots, beans, and peas. How much veggies you use is up to you.

4. Once the frozen veggies are ready throw in your rice. If your wok or pan does not fit all your rice, I suggest you cook 1/2 the rice first. For a family of four I typically use about 1/2 to 2/3 of my cooked rice; enough for a meal. I usually don't make the full 2 cups of rice.


5. Once you have added the rice to the frozen veggies turn the heat to medium. Sprinkle 1/2 of the fried rice mix (bought from Woodmans) and add some soy sauce then stir. After the first stir add the rest of the fried rice mix and add some more soy sauce then stir again. Once you're done with the second stir turn off the heat. Taste the fried rice, if it's not salty enough for you then you can add more soy sauce or regular salt. (This is my favorite fried rice mix)



6. Once you have your fried rice, scoop it into a bowl or plate and place the scrambled eggs over it. Now it's ready to be eaten or serve.

Fruit Pizza

Bright colors to brighten up this cold and snowy weather; I'm ready for Spring!


Crust:
We used sugar cookie dough. We bought the Pillsbury pre-made cookie dough and spread it unto a baking pan. We used about 1/2 of a cookie dough log for the circle pan;
you can use more dough if you want. Baked the crust in the oven at 400 for
about 7-10mins depending on how thick your crust is.

 Cream:
We used one box (8oz) of cream cheese, powder sugar: 16 oz about 1 lb,
vanilla extract: 1 tsp, and butter: 1 stick or 8 tbl spoons.
Mix the ingredients in a bowl with an electric mixer until it becomes creamy.

Final Touches:
After the crust is done baking set it aside to cool down. Once cooled spread the cream over and decor it with slice fruits; you can use any fruits you want, I used strawberries, mango, and kiwi. You can eat/serve it right away or if you like it cool/cold you can put it in the fridge for a bit. (^_^)
