Easy, Quick, and Yummy
Steps:
1. Make the rice in the rice cooker. I have a 5 cup Tiger Asian rice steamer; I usually make about 2 cups, adding water to about the 3rd line. My rice cooker takes about 15mins to cook the rice.
2. Once the once is cooked, scramble and fry the eggs then set the eggs to the side. How much eggs you make is up to you. (If you don't want eggs, skip this step)
3. Next, in a wok or large enough frying pan put in a little oil. Once the oil is hot pour in the frozen vegetables. You can use any kind of frozen veggies, I like the one with corn, carrots, beans, and peas. How much veggies you use is up to you.
4. Once the frozen veggies are ready throw in your rice. If your wok or pan does not fit all your rice, I suggest you cook 1/2 the rice first. For a family of four I typically use about 1/2 to 2/3 of my cooked rice; enough for a meal. I usually don't make the full 2 cups of rice.
5. Once you have added the rice to the frozen veggies turn the heat to medium. Sprinkle 1/2 of the fried rice mix (bought from Woodmans) and add some soy sauce then stir. After the first stir add the rest of the fried rice mix and add some more soy sauce then stir again. Once you're done with the second stir turn off the heat. Taste the fried rice, if it's not salty enough for you then you can add more soy sauce or regular salt. (This is my favorite fried rice mix)
6. Once you have your fried rice, scoop it into a bowl or plate and place the scrambled eggs over it. Now it's ready to be eaten or serve.
